Vegan Brownies In a Snap

I love baking from scratch, but sometimes, when I just want something scrumptious and ridiculously tempting to sweeten up my kitchen, ready-to-mix products can help to accomplish that in a snap.

I "veganize" all of my dishes, so I am careful to look for mixes that contain vegan ingredients to start with and then just substitute with cruelty-free add-in ingredients. Bob's Red Mill Gluten-Free Brownie Mix is amazingly easy and so delicious!

I use Earth Balance "butter" instead of margarine or dairy butter (Earth Balance melts great and is excellent for baking) and Egg Replacer in lieu of the egg that the mix calls for.

I have found Egg Replacer to be a lifesaver when it comes to vegan baking. While there are a few recipes I have attempted that the ER wasn't completely ideal for, the majority of the time, it is an outstanding binder.

I usually crumble raw almonds over the top before popping it into the oven, for a yummy, nutty touch. Bake for 25 minutes and voila! ... instant smiles!

How do you judge the sugar in the box mixes. I found a Duncan Hines box that is not Gluten free, but has no dairy in it and used the ener-g and it tasted great, but was full of sugar. I know some sugar is considered vegan and others not. I try and do everything vegan, but sometimes don't think of all ingredients when I eat something - so am not perfect! I bought some chocolate chip gluten free dairy free mix the other day but have not made it yet. Glad to have you as a friend on facebook.

uhh nice..... but what is made of the "egg replacer??" is something natural or chemical?
i'm sure i don't have it in italy, but maybe i can found something similar....
