Vegan Meat(less)ball Sandwiches
Because Mondays always seem to be my most hectic of the weekdays - between getting kids back on their school routine, answering extra emails from customers in the morning, finishing invoices and orders that I put off over the weekend, etc., I try to search for something easy and quick to make at dinner time. One that is simply a cinch, also happens to be one of our family's favorites: Vegan Meat(less)ball Sandwiches.
This meat(less)ball dish is as uncomplicated as it comes, because I buy this frozen vegan version at Trader Joes. Not only are they delicious, but a bag of 25 or so is around 4 bucks. TJ's has quite a vegan-friendly frozen section. Just keep an eye out for the V symbol on packages, as they do mark many of their vegan products throughout the store. They also carry many Morningstar products, but many of those do have egg/milk ingredients, so read the M-Star packages if you are keeping it totally animal-product free.
I just spray my baking sheet with olive oil spray, lay out the meat(less) balls, sprinkle them with garlic salt, and pop 'em in the oven for about 15 minutes.
A thick, hearty bread like Petit Pains Rustiques is excellent for tucking your little meat(less) tots into (many brands of bread are vegan; just be sure to read the ingredients, because you will occasionally find some dairy on ingredient lists). Next, I spoon some yummy vegan-friendly Bruschetta over the top (a thick spaghetti sauce works well too). Then set it next to a yummy side dish: last night was thick steak fries (but let's call them steak-less fries)... and voila! - dinner is served!
I know it's cheating and I really do love spending ample amounts of time in my kitchen preparing dinner when I can; but hey, sometimes life calls!

I'm not doing the vegan thing, but I have gone vegetarian(7 months and counting!!!). I'll def stop at TJ's on the way home tomorrow and grab some meat(less)balls. Thanks!!! :D
My friend told me about the meatless balls from TJ's and she she agreed that they're delish!
